Cannot believe I am in Costa Rica for a few days and get to tour around by myself. First of all, thank you MOM for watching the kiddos. It’s been over 5 years since we had an adult trip! A cookie story...three neighbors got together to make macarons. It was @bethwatts05 first time. @ellenpaget had taken a lesson in NYC a few months ago. @drsaracreekmore .mom first started making macarons in 2014. That’s me. I started when I was on bedrest due to early labor with Annabelle. I have probably made them on a dozen different occasions, and every time I try, it feels like the hardest project I have ever tackled in a kitchen. I guess if I worked at it as much as cataract surgery, maybe I would have it down by now?! Today, we learned a few new things! 1. New thing one-Skip the silicone mat and go with parchment paper. Silpat traps moisture and can make your precious baby macarons stick soooo bad! If you do, expect they will need a bit longer to cook. If they DO stick, you CAN put them back in the oven a couple minutes and it helps. 2. When reducing strawberry jam, if you go too long it will turn into cement 🤣. You can save your pan by adding water and simmering on medium heat to dissolve it. 3. If you mix soft-hard ball staged strawberry jam into buttercream before it hardens, it will turn into buttercream with hard candy nuggets mixed in 🤦♀️🤣. 4. You can never have too much powdered sugar, right @ellenpaget ? 5. Regular digital food scales have a margin of error greater than and 1/8 tsp. of salt. 6. When you only have a 1/4 tsp...you will look like a drug dealer trying to weigh your salt. And this is a much needed comic relief during #macaron making. 7. Chocolate ganache, friends, and wine, make everything better. @ellenpaget @bethwatts05 did I miss anything, girls? Next time, I might just order from @ladureemacaroon or ask a professional like @boonechocolat for help. Though chocolate is a whole different art, I feel like it may be the closest thing that we have to professional macaron help in #boonenc
